Liber & Co. - Classic Gum Syrup

Gum Syrup has long been a staple ingredient in the world’s best cocktail bars.
Gum syrup is a simple syrup combined with gum arabic, an all-natural emulsifier derived from African Acacia trees.
The addition of gum arabic lends the syrup a silky and more luxuriant mouthfeel when compared to a common simple syrup. It is a superior sweetener with incredible versatility.
Redshift Punch
(single serving)
1 ½ oz. Cognac or California Brandy
¾ oz. Rhubarb & Ginger Shrub
½ oz. Aperol
4 allspice berries
¼ oz. Port wine
Shake all except port and double strain into an old fashioned glass with ice. Float port and garnish with a cinnamon stick.
Union Swizzle
2 oz. rum
¾ oz. Rhubarb & Ginger Shrub
Barspoon gum syrup
6-8 dashes Angostura bitters
Mint Lightly muddle shrub, syrup and mint in a Collins glass.
Add crushed ice and rum. Swizzle. Top with crushed ice and add bitters and a mint sprig.
