Suius Cherry 

Seasonal; October Release 

A lip-smacking, delicious force to be reckoned with, Suius Cherry celebrates the big, bold flavour of the Bing cherry and the sun-dappled Osoyoos (“Suius”) summer season in British Columbia. Boasting a complementary set of ingredients, this extract is at turns aromatic, bitter, sweet and savoury. 

Beverage recommendations:
 Suius Cherry plays a dynamic role in a variety of cocktails, including the classic “Sazerac” as a bitters replacement. Its rich ruby red colour adds depth to a cocktail’s appearance, while the cherries add a natural sweetness to carry rather bitter ingredients on the palate. Suius Cherry is an ideal match for rich spirits, such as whisk(e)y (Bourbon, American, Canadian and/or Scotch), slow-aged rum and brandy. 

Cooking recommendations: 
Suius Cherry brings a complex aromatic spice that takes pride of place in sweet applications. Use it as a replacement for vanilla extract in baked cakes, cookies, frozen desserts, and sweet sauces. It also works well as a flavour enhancer for savory dressings, sauces and marinades.

Isle of Bourbon 

2.00 oz (60mL) Maker’s 46 Bourbon 
0.75 oz (22mL) Sweet Vermouth 
0.25 oz (10mL) maple coffee cordial 
2 dashes Bittered Sling Suius Cherry Bitters 

Stir all ingredients gently with ice for 10-15 seconds. Strain into an old fashioned glass with a large ice cube, and garnish with an lemon cheek. 

Cherry Collins

1.50 oz (45mL) Bombay Sapphire Gin 
0.75 oz (22mL) Lemon Juice 
0.75 oz (22mL) cherry star anise syrup 
2 dashes Bittered Sling Suius Cherry Bitters 

Build ingredients in a collins glass filled with ice. Add the Gingerbeer, stir gently (swizzle) and serve with two pitted BC Cherries on a pick! 

Seelbach Cocktail #4 

1.00 oz (30mL) Jim Beam Black Bourbon 
0.50 oz (15mL) Cointreau 
7 dashes Bittered Sling Denman Bitters 
7 dashes Bittered Sling Suius Cherry Bitters 
Stir ingredients with ice for 5-10 seconds, pour into chilled champagne flute. Top with ice-cold sparkling wine and a fancy lemon twist. 

Sazerac #6 

2.00 oz (60mL) Collingwood Canadian Rye Whisky 
0.50 oz (15mL) Simple Syrup 
2 dashes Bittered Sling Suius Cherry Bitters 
1 dash Taboo Absinthe by Okanagan Spirits (rinse the glass) 

Rinse a chilled old fashioned glass with absinthe, set aside. Stir all ingredients gen- tly with ice for 10-15 seconds. Strain neat into rinsed old fashioned glass, and garnish with an lemon cheek. 

Cherry Julep 

Inspired by one of the great classic whiskey cocktails of the south, this cocktail takes the cherry tasting notes of an incredible spirit, Bourbon, and blends them with classic ingredients to create a signature sipping cocktail for the late summer. 
2.00 oz (60mL) Maker’s Mark Bourbon 
2 BC Tree Fruit’s Cherries, pitted 
5 freshly plucked mint leaves 
2 dashes Bittered Sling Suius Cherry Bitters 
0.50 oz charred American oak syrup 
Garnishes – mint sprig, cherry 

Muddle the mint and cherries together with the bourbon and bitters. Add the syrup, and muddle until well incorporated. In a julep cup (or an old fashioned glass), fill with crushed ice half-way. Add the muddled ingredients to the glass, and stir. Top with more crushed ice. Garnish with a mint sprig, cherry skewer, confectioner’s sugar.
