Shrub originated in the Middle East / West Asia as "sharbat" (the word shrub comes from "sharab," meaning "drink" in Arabic) and made its way to north America getting popular in the colonial era.
We make shrubs because it's another way for us to preserve the gorgeous, perfectly ripe, yet ever fleeting fruit we work with during the different harvest seasons. The vinegar and sugar both help to preserve the fruit flavors while balancing each other out to make a sweet-tart syrup that a perfect base for a drink. Shrub is essentially a fruit-vinegar-sugar syrup. Mixed with sparkling water it's the most refreshing drink I've ever had. Of course, it's also great in cocktails.
Made from: organic unrefined cane sugar, organic apple cider vinegar (made from apples grown in Sebastopol, California), organic polka raspberries (grown in Watsonville, California), fruit pectin.
